Training types and registration (Sept. 2026)
- A food establishment is a place or vehicle used to prepare food (including keeping it hot or cold) or provide food services for payment.
- Four kinds of training: food establishment manager, food handler, training for food aid organizations, and a short training session.
- The operator must name a person responsible for food hygiene and safety control who holds the "Food establishment manager" certificate (the operator or a trusted staff member).
- Option 1: that person is present during staff working hours; if not, at least one employee holding a manager or food handler certificate must be present.
- Option 2: at least 10% of staff hold a manager or food handler certificate; a trained person need not be present at all times.
- The operator keeps a register: names of certificate holders, total number of people preparing food or cleaning food-contact equipment, and the responsible person's name; kept at the establishment; a trained person who leaves stays on it for 12 months.
- Exempt: short special events, certain farm producers, rendering or meat recovery plants, farm-to-dairy milk or cream haulers, certain commercial fishers, dairy plants (except category 3 permits), intermediate or family-type resources with three residents or fewer.
- Training is given by MAPAQ-authorized trainers; the exam is held in French or English only.
- The certificate belongs to the person trained and stays valid when they change jobs; a copy may be given to the employer.
Food handler training (Aug. 2025)
- For employees who prepare or handle food and those who clean food-contact equipment such as dishes, including staff making drinks with added milk or fruit.
- Six hours, leading to the "Food handler" (Manipulateur d'aliments) certificate; length and subjects are set by law.
- Subjects: storage temperatures; work methods that prevent contamination; general hygiene; cleaning, sanitizing or disinfecting equipment; environmental sources of contamination; microbiological, physical and chemical risks; food origin; labelling.
- The certificate is valid for life.
Manager; short session; recognition of prior learning
- Manager training: 12 hours; includes all food handler content plus risk analysis and management, legal standards and ongoing staff training.
- Short session (3.5 hours) for affiliated child care services with nine children or fewer and intermediate or family-type resources with four to nine residents; gives a confirmation of participation, with no exam.
- Recognition of prior learning (go straight to the exam): at least two years of work experience for food handler, three years for manager; requests assessed by ITAQ.
- Some outside programs (e.g. FOODSAFE Level 1, ServSafe Food Handler, Ottawa Public Health food handler training) are recognized as equivalent and valid in Quebec with no paperwork.
