In Quebec, the mandatory food hygiene and safety training of the Ministère de l'Agriculture, des Pêcheries et de l'Alimentation (MAPAQ) leads to a certificate, the attestation, that people usually call the food handler certificate or certificat d'hygiène et salubrité. For kitchen staff and anyone who handles food or washes the equipment that touches it, this is the Food handler (Manipulateur d'aliments) attestation; the person responsible for hygiene control in the establishment takes the Food establishment manager (Gestionnaire d'établissement alimentaire) training instead.
This guide explains, in order, how to tell whether the training applies to you, find an authorized trainer, pass the exam, receive the attestation and avoid the common mistakes, with what it costs. Each rule links to the Québec.ca page it comes from; those pages are in French. To prepare for the exam, our free practice tests and mock exam cover the same subjects, from temperatures and the cold chain to cleaning and sanitizing.
Step by step
Check that the training applies to you
The Food handler training is for employees who prepare or handle food, those who clean equipment in contact with food, such as dishes, and staff who make drinks with milk or fruit. Check with your manager: enough employees may already be trained.
